Recipe: Kale and Avocado Wraps

Ingredients:

  • 4-6 kale leaves, washed and dried
  • 1 avocado, peeled and diced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper, to taste
  • Additional fillings of choice (suggestions below)

Instructions:

  1. Preheat a grill or pan to medium-high heat. Place the kale leaves on the preheated surface and grill for 1-2 minutes per side or until leaves are wilted.
  2. In a small bowl, combine the avocado, olive oil, lime juice, salt and pepper. Mash with a fork until desired consistency is reached.
  3. Spread the avocado mixture onto each of the kale leaves. Top each leaf with your favorite filling (see suggestions below).
  4. Roll up and serve immediately.
