Recipe: Kale and Avocado Wraps
Ingredients:
- 4-6 kale leaves, washed and dried
- 1 avocado, peeled and diced
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- Salt and pepper, to taste
- Additional fillings of choice (suggestions below)
Instructions:
- Preheat a grill or pan to medium-high heat. Place the kale leaves on the preheated surface and grill for 1-2 minutes per side or until leaves are wilted.
- In a small bowl, combine the avocado, olive oil, lime juice, salt and pepper. Mash with a fork until desired consistency is reached.
- Spread the avocado mixture onto each of the kale leaves. Top each leaf with your favorite filling (see suggestions below).
- Roll up and serve immediately.
