Kale and Butternut Squash Gratin


  • 2 tablespoons olive oil
  • 1/2 onion, chopped
  • 1 butternut squash, peeled and cubed
  • 1 bunch kale, torn into small pieces
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste


  1. Preheat oven to 350°F.
  2. In a large skillet, heat olive oil over medium heat. Add onion and sauté until softened, about 3 minutes.
  3. Add butternut squash and cook for about 7 minutes, or until softened.
  4. Add kale and cook until wilted, about 3 minutes.
