Kale and Potato Gratin
- Ingredients:
- 3 Tbsp. Olive Oil
- 3 cloves Garlic, minced
- 1/2 tsp. Salt
- 2 lbs. Potatoes, peeled and cut into 1/4-1/2 Inch slices
- 4-5 cups Kale, washed and cut into 1-2 Inch Pieces
- 1/4 cup Heavy cream
- 3/4 cup Gruyere, or Swiss cheese
- 1/4 cup Parmesan cheese, grated
- Pepper, to taste
- Instructions:
- Preheat oven to 375 degrees
- In a large skillet heat olive oil over medium heat. Add garlic and salt, cook for a minute.
- Add potatoes and cook for about 7-8 minutes, stirring occasionally.
- Add kale and cook for a few minutes, stirring, until kale is wilted.
- Spread potato and kale mixture in an oven proof baking dish, spreading evenly.
- Pour cream over vegetables and sprinkle with the gruyere and Parmesan and season with pepper.
- Bake for 25-35 minutes, until potatoes are cooked through and cheese is golden and bubbly.
- Serve immediately and enjoy!
