Kale and Potato Gratin

  • Ingredients:
    • 3 Tbsp. Olive Oil
    • 3 cloves Garlic, minced
    • 1/2 tsp. Salt
    • 2 lbs. Potatoes, peeled and cut into 1/4-1/2 Inch slices
    • 4-5 cups Kale, washed and cut into 1-2 Inch Pieces
    • 1/4 cup Heavy cream
    • 3/4 cup Gruyere, or Swiss cheese
    • 1/4 cup Parmesan cheese, grated
    • Pepper, to taste
  • Instructions:
    • Preheat oven to 375 degrees
    • In a large skillet heat olive oil over medium heat. Add garlic and salt, cook for a minute.
    • Add potatoes and cook for about 7-8 minutes, stirring occasionally.
