Kale and Quinoa Bowl

  • Ingredients:
    •   1/3 cup quinoa
    •   2 cups vegetable broth
    •   1/2 teaspoon olive oil

    •   1/2 red bell pepper, diced
    •   1/2 cup shelled edamame
    •   1 bunch kale, chopped
