Ingredients

  • 250 g (9 oz) Dried noodles, egg or wheat
  • 400 g (14 oz) Cabbage, core removed, thinly shredded
  • 4 Spring onions, sliced, whites and greens kept apart
  • 3 Garlic cloves, finely chopped
  • 1 thumb-sized piece Fresh ginger, peeled and finely grated
  • 2 tbsp Neutral oil
  • 3 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 1 tbsp Toasted sesame oil
  • 2 tsp Sugar or honey
  • 1 tbsp Sesame seeds, toasted, to serve
  • Chilli sauce, optional, to serve

You’ll need: Large wok or frying pan, Saucepan

Method

  1. Make the sauce. Stir the soy sauce, rice vinegar, sesame oil and sugar together until the sugar dissolves.

  2. Cook the noodles. Cook the noodles following the packet instructions, drain, rinse under cold water and shake dry.

  3. Stir-fry the cabbage. Heat the neutral oil in a large wok or frying pan over high heat. Add the cabbage and spring onion whites and stir-fry for 4 to 5 minutes, until the cabbage is wilted with browned edges but still has some crunch. Add the garlic and ginger and cook for 30 seconds.

  4. Toss. Add the noodles and sauce and toss for 2 minutes until everything is hot and evenly coated.

  5. Serve. Top with the spring onion greens, sesame seeds and chilli sauce, if using.

Storage

Refrigerate in a covered container for up to 2 days. Reheat in a hot pan until steaming throughout.
