Ingredients
- 200 g (7 oz) Long-grain or jasmine rice
- 400 g (14 oz) Broccoli, cut into small florets, stems peeled and sliced
- 1 large Carrot, grated, optional
- 2 Spring onions, thinly sliced
- 50 g (1¾ oz) Roasted peanuts, roughly chopped
- 3 tbsp Peanut butter, smooth
- 2 tbsp Soy sauce
- 2 tbsp Lime juice
- 2 tsp Maple syrup or honey
- 1 tsp Fresh ginger, finely grated
- 1 Garlic clove, finely grated
- 3 tbsp Warm water, plus more to thin
You’ll need: Saucepan with a lid, Small bowl
Method
Cook the rice. Rinse the rice, then cook it according to the packet directions. Keep it covered and warm once done.
Make the sauce. Whisk the peanut butter, soy sauce, lime juice, maple syrup, ginger, garlic and warm water until smooth and pourable, adding a spoonful more water if it is too thick.
Steam the broccoli. About 8 minutes before the rice is ready, put a shallow layer of water in a pan with a lid and bring to a boil. Add the broccoli, cover and steam for 4 to 5 minutes, until bright green and just tender. Drain well.
Assemble. Divide the rice between bowls. Top with the broccoli, carrot and spring onions, spoon over the sauce and scatter with the peanuts. Add chilli sauce at the table if you like heat.
Storage
Keep the sauce and broccoli in separate covered containers in the fridge for up to 3 days. Cool cooked rice within about an hour, refrigerate it, eat it within 1 day and reheat it only once, until steaming hot. The sauce thickens in the fridge; loosen it with warm water.
