Ingredients
- 2 tbsp Olive oil
- 3 Garlic cloves, thinly sliced
- ¼ tsp Chilli flakes, optional
- 500 g (1 lb 1½ oz) Fresh spinach, washed, large stalks removed
- 1 Lemon, zest and juice
- Salt and black pepper
You’ll need: Very large frying pan or wide pot, Tongs
Method
Warm the garlic. Heat the oil in a very large frying pan or wide pot over medium heat. Add the garlic and chilli flakes and cook for about 30 seconds, until fragrant and pale gold. Do not let it brown.
Wilt the spinach. Add the spinach in handfuls, turning with tongs as each batch collapses to make room for the next. Cook for 2 to 3 minutes in total, until just wilted and glossy.
Drain. If a lot of liquid has pooled in the pan, tilt it and spoon the liquid away so the spinach is not watery.
Finish. Off the heat, add the lemon zest, a squeeze of juice, salt and pepper. Toss, taste and serve straight away.
Storage
Best eaten straight away. Leftovers keep in the fridge for up to 2 days; reheat briefly or stir into eggs, pasta or soup.
