Ingredients
- 800 g (1 lb 12 oz) Sweet potatoes, scrubbed and cut lengthways into thick wedges
- 3 tbsp Olive oil
- 1 tbsp Cornflour (cornstarch)
- 2 tsp Smoked paprika
- ½ tsp Garlic powder
- ¾ tsp Fine salt
- Lime wedges, to serve
You’ll need: Large baking tray
Method
Heat the tray. Heat the oven to 220°C (425°F) with a large baking tray inside.
Coat. Mix the cornflour, paprika, garlic powder and salt in a large bowl. Add the wedges and the oil and toss until every piece is lightly coated. The cornflour helps the surface crisp.
Roast. Spread the wedges over the hot tray with space between them. Roast for 35 to 40 minutes, turning once halfway, until the edges are dark and crisp and the centres are soft.
Serve. Serve hot with lime wedges, and a yoghurt or mayonnaise dip if you like.
Storage
Best eaten straight away. Leftovers keep covered in the fridge for up to 3 days; re-crisp them in a hot oven rather than the microwave.
