Ingredients
- 2 tbsp Olive oil
- 4 Spring onions, sliced
- 2 Garlic cloves, finely chopped
- 300 g (10½ oz) Fresh spinach, roughly chopped
- 150 g (5¼ oz) Feta, crumbled
- 1 tsp Dried oregano
- 1 tbsp Lemon juice
- 4 Large flour tortillas or flatbreads
- Black pepper
You’ll need: Large frying pan, Sieve
Method
Cook the filling. Heat 1 tablespoon of the oil in a large frying pan over medium heat. Cook the spring onions for 1 minute, add the garlic for 30 seconds, then add the spinach in handfuls and stir until wilted, 2 to 3 minutes.
Drain and mix. Tip the spinach into a sieve and press out the excess liquid, then return it to a bowl. Stir in the feta, oregano, lemon juice and pepper. The feta is salty, so you probably will not need extra salt.
Fill. Warm the tortillas briefly so they bend without splitting. Spoon a quarter of the filling along the centre of each, fold in the sides and roll up tightly.
Crisp. Wipe out the pan, add the remaining oil and cook the wraps seam side down for 2 to 3 minutes per side, until golden and crisp. Cut in half and serve hot.
Storage
Refrigerate the cooled filling for up to 2 days. Assemble and crisp the wraps just before eating.
